After posting a little bit about intuitive eating last week and asking in an Instagram Poll what you want to see from me on here, I got so much positive feedback and requests to share what I eat in a day or a typical week! During quarantine, I've been making myself simple meals and trying to mix it up as much as possible. I basically just eat whatever my body craves, and there isn't much more to it. I eat whenever I'm hungry, and I usually just make whatever I'm in the mood for. It's been working well for me, so I thought I would share for anyone who is interested or might be in a little bit of a rut when it comes to cooking at home or coming up with easy meal ideas during this time.
Breakfast
I love having greek yogurt for breakfast, and always have, since high school! I usually crave something on the sweeter side for breakfast, so I like making a bowl of greek yogurt (usually vanilla Chobani, but my new favorite is the vanilla skyr from Trader Joe's -- it's a little bit thicker and actually has much less sugar!) with berries, hemp seeds, and a little granola bark from Trader Joe's. Some days when I want to switch it up or I'm feeling hungrier, I'll make my little banana pancakes, which you can find the recipe for on my IG highlights here. Every morning I usually make 1-2 cups of coffee, too! I just add almond milk.
Lunch
Avocado toast with an egg has been my go-to lunch in college, and it is seriously one of my favorite meals ever. I love avocado toast so much... as basic as it might be! However, it doesn't always satisfy me completely, so if I have that for lunch I sometimes want something after, like chips, crackers, grapes, or TJ's little peanut butter cups.
Another thing I've been making for lunch lately has been my new favorite salad combo: greens + pickled red onion + chicken or tuna + cucumber + avocado + cilantro/avo dressing + salt + pepper. If I'm out of avocados or not in the mood for a salad, I'll sometimes have an apple and veggies dipped in peanut butter. I eat a lot of peanut butter... haha.
The other day I didn't have a ton of groceries, so I made some penne, added peas and tuna, lemon juice, a drizzle of olive oil, salt, pepper, and red pepper flake. I just winged it with what I had and it ended up being a perfect pasta for lunch!

Dinner
Dinner really depends on what I have on hand and what I am in the mood for. The other day I made little tacos, but other things I've made during quarantine include bowls with veggies, rice, and a fried egg (+ tons of sriracha, obviously!), or pasta with veggies and sauce... I always try to incorporate sauteed greens (arugula, kale, or spinach) wherever I can. I'm pretty good about this, and I like the taste of it, so that is my go-to for getting in greens every day. I also make eggs a lot... an omelet with mushrooms and peppers and arugula is a go-to. It really just depends!
Snacks + Drinks
I love dips... like dipping really anything in peanut butter, or dipping veggies or crackers in Trader Joe's buffalo hummus. So good. I usually need an afternoon snack every day, so it's typically something crunchy that I can dip in something else!
I also drink a ton of water throughout the day, and almost always have sparkling water with lunch and/or in the afternoon. It's so satisfying because of the bubbles and a little flavor. My favorite sparkling waters are coconut La Croix or cherry lime Klarbrunn.
....and once it hits five o'clock... it's time for a cocktail or a few glasses of Sauvignon Blanc. I mentioned the other day that I gave up wine for lent this year, and ever since lent has been over, I've been nonstop drinking wine like I'm making up for lost time. I need to chill.

Dessert
I almost always have dessert at night. I have a sweet tooth, and I can't deny it! I love the mini dark chocolate peanut butter cups from Trader Joe's, but my mom also bakes a lot, so I usually have something more decadent for dessert when I am at home with her! Also, I'm a huge ice cream fan, so if I have some in my freezer, I definitely will be pulling it out.

In general, I feel like I'm a pretty hungry person. Like, I need to eat something every few hours because I'm just hungry! I think for the most part the meals I make for myself are a little on the smaller side so that probably explains this. Anyway, that's it! I'm pretty simple, I like to think. I like what I like, and I'm not too picky!
